Big Bend Stew
· 1 cup rice
· 1 can good quality chili (i.e. Wolf Brand)
· 1 can whole kernel corn
Cook rice according to package directions. When done, add chili and
corn to the rice and stir constantly over a medium flame until warmed
through.
Meat Loaf On a Stick (Drumsticks)
· 1 cup cornflakes
· 1 pound hamburger
· 1 egg
· 1/2 onion (chopped)
· 2 teaspoons salt
· 1/8 teaspoon pepper
· 1 teaspoon mustard
Crush the cornflakes, and then mix together with remaining ingredients.
Wrap a small quantity of this mixture around the end of a stick,making
it long instead of into a round ball. Wrap foil around the meat and
part of the stick to prevent the meat from falling into the coals. Place
it over a bed of coals, turning it slowly to cook it evenly. Makes about
seven drumsticks, serves 3-4
Packet Pork Chops
· Butterfly Pork Chops
· 1 Onion, cut into large rings
· 1 Green Bell Pepper, cut into 1-inch pieces
· Salt and Lemon Pepper to Taste
Start with a 12" square sheet of heavy-duty aluminum foil. Place
one pork chop, along with some of the onion and bell pepper in the center
of the sheet. Sprinkle with salt and pepper. Fold the aluminum foil
around the pork chop, making sure it's securely sealed. Place the packets
on the grill over hot coals and cook for about 30-40 minutes, depending
on the size of the chops. Open the packets carefully, as the steam will
be very hot.

· 1 Hershey's Milk Chocolate Bar
· 1 bag marshmallows
· 1 package graham crackers
Prepare by breaking a full-size graham cracker in half, so that you
have two square pieces. Break off a piece of the Hershey bar and place
it on one of the graham cracker halves. Roast a marshmallow over the
campfire, and when it is soft, slide if off the marshmallow fork onto
the chocolate. Immediately cover with the other graham cracker half,
and then squeeze the sandwich together. Be careful not to burn yourself,
and then make s'more!
